That is how I made the Raspberry Preserves this year without added sugar. For the Sour Cherry it's a 3 day process and I used honey vs sugar - no pectin.

It's still water-bath because of the high acidity.

Do you have access to a list of high acid vs low acid fruits/veggies? I can dig one up if you'd like or you can look in Stocking Up - sometimes a copy will pop up on Amazon or some other retailer for $1.99. I see a used one on Amazon (good condition) for $6.60 with $3.99 shipping.

I figured.  But the GF wanted me to ask, lol.  For some reason, she has to hear these things from someone other than ME.  We've got several good books, and the USDA canning guide too.

Canning Fingerling potatoes. 1 6' Row = 7 - 10 quarts. 3 rows dug, 1 row canned, 7 to go.

Not all Fingerling so it will be interesting to see what the ratio is for the Red Potatoes (and whatever varieties ND snuck in  laugh)
